  1. I truly dwell on every word this man says regarding our equines. I not only have learned a lot from him but I count him to do the right thing at the right time in the right place … and I “know” that a single ant (horse slaughter issue) could not cross his path without him knowing about it and taking the best possible action.

      The compound I was trying to remember was Carnitine. It was once thought to be a good dietary supplement, but was then found to metabolize into trimethylamine N-oxide (TMAO). This compound is associated with increased risk of atherosclerosis. Scientists are beginning to believe this is the culprit in beef (not the fat itself). If so, that nice lean horsemeat we are supposed to eat for our health is not so good!

      The highest amount of L-carnitine are found in kangaroo meat (637 mg), horse meat (423mg), beef (139 mg per 100 g of dry weight).
